What to do in the first minute of a kitchen fire

Turn the burner off if you can reach the knob without leaning over the flame. Slide a lid or a cookie sheet onto the pan and leave it there. Steam and flame both need that seal.

Do not carry a burning pan to the sink. Movement feeds the fire and spills grease on the way. Do not throw water on grease. Water flashes to steam and throws burning oil outward.

If the fire leaves the pan, get everyone out, close the door if you can, and call the emergency number from outside. Tell the dispatcher there is a kitchen fire and whether anyone is still inside.

Afterward, do not turn the hood fan back on until a crew or an electrician has looked at the wiring. Hidden heat in a cabinet is how a second fire starts an hour later.
